Spicy Cioppino (Seafood Stew)

Everyone knows by now that we had to cancel our recent trip to San Francisco. For my final attempt to make up for this disappointment (that can be blamed on the weather), I brought San Francisco to him (and his belly).

We have always enjoyed watching the Oscars, trying to guess the winners of all the movies (most of which we have not seen). We like star-gazing and laughing at Ellens tasteful jokes! I wanted to come up with a fancy meal to enjoy while we watched the Oscars, but what to make??

I was perusing the seafood counter in Whole Foods, trying to decide between scallops, shrimp, fish, clams....when it hit me! Why not all of them?!?! I had the perfect recipe tucked away that needed one more test run before becoming blog-worthy, Cioppino.

Cioppino is a fish stew that originated in San Francisco. It usually combines the fresh catch of the day with a tomato-wine sauce. How perfect! A San Francisco-inspired meal full of some of our favorite ingredients (crab, wine, garlic).

I will admit, this is not the cheapest dish to make, so we only bust out for special occasions, and ONLY when there is worthy seafood for the recipe. This recipe is most fun when it is just the two of us, especially when crab legs are involved! It can get a bit messy when you are trying to crack crab legs and open clams in a red broth!

A few tips for this recipe:
1. Definitely prep all the ingredients prior to starting the cooking process. This recipe cooks quickly in the beginning and at the end.
2. If you are making for 2 people, make the same amount of the broth, but cut down on the seafood. I find that seafood doesn't make a good leftover meal. For instance, when I made this on Sunday, I bought two small crab clusters, 8 shrimp, 4 scallops and 10 clams. Even that was too much for our large appetite!
3. Any type of seafood can be used here. If you don't like mussels, try clams. Not a huge shrimp fan, try squid or a sturdy fish. If you are making this for a dinner party, cut out the crab so it is not as messy to eat.
4. Don't wear a white shirt when you eat this!

I should also add that the long list of ingredients shouldn't turn you away from this recipe. It really is quite easy - mostly just adding everything into one big pot. Stash this recipe away for a special meal to impress your loved one.

Another option is to make the "stew" part ahead of time (everything but the seafood). Just reheat it in a large enough pot and cook the seafood right before you are ready to serve it.

Spicy Cioppino

Yields: 4-6 servings
Prep Time: 20 minutes
Cook Time: 45 minutes


2 tablespoons olive oil
2 tablespoons butter
1 medium onion, finely chopped
1 fennel bulb, finely chopped
1 celery stalk, finely chopped
4 large garlic cloves, minced
1 bay leaf
1 teaspoon dried oregano
1/2 teaspoon dried thyme
1/2 teaspoon dried basil
1 teaspoon red pepper flakes
1/2 teaspoon salt
1/4 teaspoon pepper
2 tablespoons tomato paste
1 1/2 cups dry red wine (such as a Rioja or Chianti)
1 (28 ounce) can whole plum tomatoes and juice, chopped
1 (8 ounce) bottle clam juice (about 1 cup)
1 cup chicken broth (vegetable broth works also)
salt and pepper to taste

1 pound Dungeness crab leg or cluster, thawed if frozen (might need to cut if pot is smaller)
1 pound mussels or clams (scrubbed and de-bearded)
1 pound large shrimp (16-20 count), shelled and deveined
1 pound sea scallops, tough muscle removed from side of each if necessary
1/4 cup fresh parsley, finely chopped

Serve with:
Sourdough bread slices
Roasted garlic
Parmesan cheese, shredded

Start by chopping the fennel, onion and celery to the same size pieces. In a small bowl combine the oregano, thyme, basil, red pepper flakes, salt and pepper and set aside.

Heat the butter and oil in a large heavy pot or dutch oven. Saute the onion, fennel and celery until softened, about 5-7 minutes. Stir in the minced garlic and cook for 1 minute, then stir in the spice mixture. After about 30 seconds, add in the tomato paste and stir until well combined.

Pour in the wine and bring this to a boil and reduce by about half, while stirring occasionally. Add in the broth, clam juice, chopped tomatoes and their juice and the bay leaf. Bring this to a simmer, cover and cook for 35-40 minutes.

While the broth cooks, pull out the seafood and prep anything (peel and devein the shrimp, clean the mussels, cut the crab clusters, etc.). When the broth is finish, taste and add salt and pepper accordingly. Prep any side dishes or set the table at this point before adding in the seafood!

Add the crab and mussels (or clams) in the pot first, pushing them into the broth so they are covered. Cover the pot and cook for 2-3 minutes, then add in the scallops. Cover and cook another 2 minutes. Finally, throw in the shrimp, cover and cook another 1-2 minutes. Garnish with fresh parsley and shredded Parmesan cheese. Serve immediately.

Kettler Travel Journal - San Francisco Part 3

Ok, its about time I got around to this.....the final installment of Ryan and I's trip to San Francisco is by far the most important! The food! 

Unless you've been there, it is hard for me to explain the scrumptious cuisine at every turn in San Fran. From fresh cherries, to homemade ice cream, to authentic Sicilian cuisine, we left about 5 pounds heavier, and a whole lot happier :) 

The breweries and wineries might bring people to CA, but the food makes them stay.

Even though it felt like we spent an entire day just to get to San Fran, only to arrive at 10am, Ryan and I were energized when we arrived! We were pumped to be there, to see our friends, to explore, but most importantly, we were HUNGRY! After settling in a bit, we walked around the corner to The Plant, Jessica's favorite organic spot (with some damn good juices too)! We munched on delightful fish tacos, kale salad, coconut tempeh and udon noodles while planning our weekend together.

After our rather large meal, and weekend plan, we started walking back home and spotted a little gelato spot. We suddenly realized we had to fill the hollow spot in our legs, so we stopped in...

Then it was off for our beer tasting at Lagaunitas and Russian River in Santa Rosa. I thought Ryan was going to cry, he was so happy to be there. We couldn't waste another moment, so decided to all try different beers and share. (And yes, as you probably figured out, I was NOT very good about my gluten free diet that weekend).

At Lagaunitas, I tried Etwas kolsch, Brandy Barrel Aged Stout, Lucky 13 and Schemed Saison. The saison was my favorite! At Russian River, we ordered the ridiculous 16 sampler and these amazing pizza bites made with their signature Pliny beer. Yes, these were worth EVERY calorie!

After several beers and stuffing ourselves with pizza bites, it was bedtime for the Southern travelers.

Jessica thought it would be a great idea to run the Lyons Steps the next morning...not so great after about 22 hours awake, plus many drinks. This straight up kicked my butt, and Corey's!! Jessica and Ryan were running circles around us. (Sorry to call you out Corey, but I couldn't be alone on this one)!

We picked up coffee and treats at Chestnut Street Coffee Roastery and got ready for our trip out to wine country. After a few wedding venue stops (which were amazingly gorgeous), we stopped into Healdsburg Bar & Grill for a much deserved cocktail and late lunch.

I should pause to explain that bar food in wine country is VERY different than in the South. They actually have local wines and produce on their menus. And, not everything is deep fried or covered in cheese! I enjoyed a refreshing John Daly cocktail and a grilled asparagus salad with green goddess dressing, pea shoots and radish (apologize for the picture qu.

Ok so maybe there was some deep fried food (like deep fried bacon and truffle fries) :)

We then headed over to Jessup Cellars, which we all know about already, to taste the finest of Napa! Afterwards, we rushed home, threw on a jacket (because San Francisco is about 20 degrees cooler than wine country) and ran out the door to the Giants game, with a quick stop into 21st Amendment.

This was our second Giants game...the first was the day after we got engaged. Always a blast, mostly because I can find gluten free nachos and good wine there.

The next day was left open to explore the city a bit more. We headed over to our favorite area, the Mission for the country's best ice cream at Bi-Rite Creamery. As we turned the corner and saw the very long line, we popped into Bi-Rite Market for a few snacks while we waiting in line. I picked up small bag of vibrant cherries and a beet salad, perfect for a little picnic in Dolores Park, which was the happening place that Saturday!

Then, the moment I had been waiting for...Omnivore's Books on Food. Who would have thought that a little simple book store would get me so excited. Well, folks you don't know me very well then! This book store only has cookbooks, books about food, books about drinks, historical books on types of cuisine, and more. We spent over an hour in there perusing through these mouthwatering pages.

Then it was the moment that Jessica (other Jessica) had been waiting for...our special dinner. Pause for a second to discuss my little friend here. To say she loves to surprise he friends is a HUGE understatement. This girl lives off of them, and she always finds a way to make it amazing and thoughtful. She made reservations at La Ciccia for my birthday dinner. My mouth is watering just thinking about this meal!

The restaurant is barely visible from the street. You walk through the door and can't even see into the restaurant because of a large curtain. There was so much suspense leading up to it, that when I finally walked through the curtain, I felt like I was literally walking into Sicily. Most of the staff didn't speak a lot of English, just enough to recommend the perfect wines and menu items. The place probably sat about 50 people and was packed the entire time we were there.

Some of the dishes that we endulged in:
  • Baby octopus stew in spicy tomato broth
  • Squid ink pasta with lemon
  • Semolina gnochetti with pork and aged pecorino
  • Seared lamp tenderloins drizzled with cooked grape must
We dined like royalty that night, and I will never forget it! (Sorry I don't have a lot of pictures, but it was a very small restaurant with even smaller amounts of light.)

Before our sad departure, we made one more stop, Fort Mason Farmers Market. It was packed full of colorful and vibrant produce and tasteful treats, one of which was a gluten and wheat free bakery, Flour Chylde Bakery.

Kettler Travel Journal - San Francisco Part 2

This has taken me a long time to post, but it was about time I continue the story of our San Francisco journey a few months back, which started with brewery visits.

Another fantastic part about our visit....WINE COUNTRY! Possibly one of my favorite spots in the country. The never ending rows of grapevines, friendly people and unbelievable wines.

Healdsburg Country Gardens
I am lucky enough to have traveled out there several times, but this was Ryan's first trip and first real experience with wine tasting. I say real because he has been wine tasting before and knows the proper techniques and etiquette, however, there is something to be said about tasting wine in the Mecca of vinification (translation, wine making).

During our visit to San Fran with our besties (remember Jess and Corey), they took us to one of their favorite wineries, Jessup Cellars. A private little winery in the heart of Yountville (Napa Valley). We tasted about 7 wines and thoroughly enjoyed each one. Ryan and I left with only 2 bottles since we were flying home and limited on space. HOWEVER, Jess and Corey sent me a bottle of Petit Sirah for my birthday along with an amazing chocolate sauce.

Jessup makes a chocolate sauce starring their Zinfandel Port. It has been in my fridge for about a month now and safe to say goes on top of everything! Cupcakes, fruit, waffles, pretzels, oatmeal, granola, in my coffee, and often times directly into my mouth! It has just the right amount of sweetness to offset the slight bitterness from the chocolate. Then right when you thought it couldn't get any better, the Zinfandel Port flavor punches out to finish the round. So, thanks guys for sending me a little bottle of happiness :)

I can't wait to go back to beautiful wine country next year, but this time, we will be there during harvest season and for a certain special couple's nuptials! :)

Kettler Travel Journal - San Francisco Part 1

We were in San Francisco last week - land of wine, startups, hipsters and amazing beer! Ryan was like a kid in a candy store on the way up to Petaluma and Santa Rosa to visit Lagunitas Brewery and Russian River Brewery. Our gracious hosts for the trip, Jessica and Corey (who are newly engaged) showed us around. Between the four of us, we tasted more than 25 beers!
